What temperature should a fridge be?
A fridge should be kept between 0°C and 5°C. Too cold wastes energy and may freeze items. Too warm shortens food life – milk lasts up to 10 days at 4°C but only around 7 days at 7°C.
Keeping a fridge at the correct temperature is important for both food safety and energy efficiency. The recommended range is between 0°C and 5°C.
Manual vs Digital Temperature Control
Some fridges regulate their temperature automatically. Fridges with a digital temperature display typically fall into this category and maintain a consistent internal temperature regardless of conditions. Fridges with a manual dial numbered from low to high do not work this way.
Manual controls are not true temperature settings – they are simply low-to-high adjustments that produce different internal temperatures depending on the ambient room temperature. As seasons change, a manual dial that held the fridge at the correct temperature in winter may allow it to warm up in summer. The dial may need adjusting seasonally to maintain the correct range.
Use a Fridge Thermometer
The only reliable way to confirm a fridge is at the correct temperature is to use a dedicated fridge thermometer. Judging temperature by feel is not precise enough. A thermometer placed inside the fridge – away from the door and not directly against the back wall – gives an accurate reading of the actual storage temperature.
Do not use mercury-filled thermometers.
Why Fridge Temperature Can Fluctuate
Many modern fridges include an automatic defrost cycle that periodically melts ice build-up on the back wall. During this cycle the internal temperature rises temporarily by a few degrees. If the temperature appears to have risen above 5°C, wait and check again later before adjusting the thermostat – it may simply be part of this normal cycle.
Temperatures are also typically at their lowest first thing in the morning after the door has been closed all night. Check that the fridge does not drop below 0°C during this period, as items near the back wall may freeze if it does.
Frequently Asked Questions
What temperature should a fridge be set to?
Between 0°C and 5°C. The ideal temperature for most food storage is around 4°C. Below 0°C risks freezing items like milk, salad, and soft vegetables. Above 5°C, food deteriorates more quickly and the risk of bacterial growth increases.
Why does my fridge temperature keep changing?
Several normal factors cause fluctuation: the auto-defrost cycle temporarily raises the temperature; opening the door lets warm air in; and manual dial thermostats respond to changes in room temperature. If the temperature is consistently above 5°C or below 0°C after allowing for these factors, the thermostat setting may need adjusting – or the fridge may have a fault.
Does room temperature affect my fridge?
Yes, particularly for fridges with manual dial controls. As ambient temperature increases in summer, a manual thermostat may not compensate automatically, allowing the internal temperature to rise. The dial may need to be turned higher in warmer months to maintain the correct range. See: how are fridges affected by room temperature?

0 replies Hi Silvia. If you only have numbers, you need to keep a fridge thermometer in the lower shelf of the fridge, and keep adjusting the dial to keep the fridge temperature in the correct range. There's no other way. Our fridge only has numbers, but we find it doesn't need changing much. A fridge with a simple thermostat that only works in numbers is very crude. It's just warm, cold and very cold, in increments. With a proper fridge thermostat you can always ensure the correct temperature to prevent wasting of energy, accidental freezing of milk, and premature wasting of food and milk because it isn't being kept cold enough.

Hi. Potentially, but it could just be a fault. My freezer is in my garage which gets to 0 degrees at times (and it’s currently 5 degrees C) but as far as I know still works fine and is -18 C inside. It’s fridge-freezers that have the main problem.
This article is about the internal temperature of a fridge. So read the following article about how the temperature of a room affects fridges and especially fridge-freezers How are fridges and freezers affected by the room temperature?
Thank you Andy , I’m hoping now when it gets warmer the freezer will start working
again , all your information is really helpful , much appreciated .
